One-Pot Turkey Scramble – Clean & Lean Meal

Ingredients:

Meat and produce

  • 1lb of lean ground turkey
  • 2 cloves garlic
  • ½ onion – finely chopped
  • ½ zucchini – chopped (1 inch)
  • ½ summer squash – chopped (1 inch)
  • 12 cherry tomatoes – sliced in half

Herbs and spices

  • 1 tsp of dried basil
  • 1 tsp of dried oregano
  • ¼ tsp of dried thyme or sprig of fresh thyme
  • ⅛ tsp of salt
  • ⅛ tsp of freshly ground pepper

Oils and vinegars

  • 1 Tbsp of olive oil, avocado oil, or coconut oil (never use canola or vegetable oil!)
  • 1 tbsp of balsamic vinegar
  • Splash of dry white wine *optional

Directions:

  1. Place a large saute pan over medium-high heat. Add oil, Turkey, onion, garlic, salt, and pepper, cook until nearly fully cooked through (about 5 min)
  2. Add in veggies and cook another 3-5 min until softened
  3. Add remaining spices, vinegar, white wine and toss to cover ingredients

*This dish is so versatile. Change up the vegetables options for different flavors.

  • You could try Mediterranean with sun dried tomatoes, olive, artichoke hearts, and zucchini – top with fresh basil and serve.
  • Or use frozen stir-fry veggies and finish with white wine vinegar and Primal Kitchen Teriyaki sauce.
  • For a harvest-inspired dish, use sweet potatoes or winter squash, dinosaur kale, and white beans. Throw in some chopped uncured turkey bacon, pecans, and use warm spices like cardamom, cumin, nutmeg, and ginger.
