A Healthier Buffalo Chicken Dip

I have to be honest, this is my all-time favorite game-day food but it’s oh so unhealthy in its greasy, cheesy glory. So I’ve put together a lighter option that’s just as good, if not better! PDF link

Ingredients:

  • 3c of finely shredded chicken – boiled or rotisserie option
  • 1/2c of Primal Kitchen Buffalo Sauce
  • 1 packet of Simply Organic Ranch dressing powder
  • 1/2 of a medium-sized onion- finely chopped
  • 1/2 cup of non-fat, plain Greek yogurt
  • 4oz of Neufchâtel cheese (it has1/3 of the fat of cream cheese)
  • 1 bag of Tillamook cheddar cheese or Mexican 4 cheese blend – divided

Directions:

  • Combine all ingredients and half of the shredded cheese into a slow cooker and mix – if you don’t have a slow cooker or prefer a dish, mix them in a bowl and place the mixture into an 8×13′ glass casserole dish.
  • Top with the remaining cheese and cook on low in the slow cooker or bake at 275 degrees until cheese is melted and dip is (bubbling about 25 min).
  • Serve with celery sticks, carrots, or Sietar brand tortilla chips
