10min Salmon Ochazuke (Rice and Tea)

Ingredients:

  • 1/2 c on Minute brand Jasmine rice
  • 1 organic green tea big
  • 4-5oz of wild-caught salmon (you can cook it fresh, use canned or single-serve pouches, or my favorite: smoked salmon)
  • 1 ½c water
  • 6-8 slices of organic cucumber
  • 2 dried seaw

Saweed slices (the snack seaweed wors great for this)

  • 1 tbsp of freshly grated organic ginger (tip* keep fresh ginger in the freezer for quick use and easy grating as needed)
  • 1 tsp of org

Organic soy sauce or tamari sauce

  • ¼ tsp of organic black sesame seeds
  • ⅛ tsp of organic red pepper flakes
  • ⅛ – ¼ tsp sea salt.
  • Optional: spicy peppers, chopped green onions, shredded carrots, mushrooms, bok choy, spinach, kale, wasabi, or any other flavors you’d like to add.

Directions

Add ½ c of water and Minute Rice to a pan or microwave-safe bowl. Bring water to a boil and cook rice for (~7 min) adding sea salt to taste (I like to add a little crushed saffron to the rice too for an extra burst of flavor). If you’re cooking your salmon, chop it into 1in cubes and begin sauteeing in a pan tending to it as you prepare the rest of the dish (cook on mediu

m-high heat for ~1 min each side)

  1. While rice cooks, place remaining 1c water in a microwave-safe glass or teapot and heat to just boiling (~2 min). Remove and add the green tea bag. Cover and allow the tea to steep.
  2. While rice and tea are being prepared, chop cucumber slices into quarters, chop any other remaining veggies you want to add, crumble the seaweed, and grate the ginger.
  3. Once rice is cooked, place it in the bottle of a soup bowl, top with seaweed, cucumbers, salmon, ginger, and any optional vegetables. Pour the green tea over the dish, add soy/tamari sauce, pepper flakes, and sesame seeds. Enjoy

Notes:

This dish is light and fresh and brimming with micronutrients including magnesium, calcium, potassium, and iodine. The salmon and sesame seeds provide healthy omega-3 fats. Green tea and seaweed are full of antioxidants, and ginger is great for the gut and digestion.

This is also a super easy dish to prep ahead of time. Just prepare the green tea and pour over the other ingredients when ready to eat.
